The Student Assembly Dining Committee sat down with Chef Tony Kveragas at Becker House Dining Room.
Chef Anthony Kveragas grew up on his father’s farm in the small town of Friendsville, Pennsylvania. He attended the University of Southern California and studied film before transferring to Boston University, where he earned his degree in Finance. Post-graduation, Chef Tony worked in Financial Research for Gulf Oil, but soon realized he didn’t like office work; food and wine were his true callings. So, he moved to Paris, France, where he attended the La Varenne Culinary School and earned his Culinary degree.
Later on, he took classes at the Dyson School of Business, earning his MPS while working at Statler Dining as a Cook, and a Pastries Teaching Assistant under Chef Bob White at the School of Hotel Administration. After a downsizing of the Statler Operation, Anthony started work with Cornell Dining as a cook in Jansen’s (which used to be the only dining room on West Campus, in the Noyes Community Center. West Campus was also where all the freshmen used to live in the ‘90s!). After West Campus, he climbed the ranks, and the hill, as the Sous Chef for RPME, where he and his team won a Lionel Horton Award for being one of the best large university dining rooms. Shortly thereafter, he opened North Star Dining Room as Head Chef, where he worked for 5 years. After various other Culinary Management positions on the Ag Quad and at Willard Straight Dining, he came to Becker House where he is currently Chef Manager!
Chef Tony’s culinary inspirations stem from his anthropological interests in the history of food, and its ties to cultural roots from around the world. His favorite foods are seafood and all varieties of Asian cuisine. He loves interacting and working with students that bring their energy, curiosity and vigorous work ethic to Cornell.
Chef Tony’s message to Cornell students is to find passion in your work and find something that you genuinely enjoy. He also suggests that you travel and explore while you’re young, and seek ways to give back to society and make a positive impact.
